In order to use the page.gallery template, the theme will need to be published! The templates from which you can select are limited to the templates available in your currently published theme.

Setting up a Gallery Page
The page.gallery template can be used to make creating a gallery page a little easier. All you have to do to is create a page and upload your images, and we'll walk through those steps below.
Step 1: A new page can be created by heading into Online Store > Pages > Add new page in the Shopify admin area.
Step 2: Select page.gallery as the Template:
Step 3: In that new page, you can upload all the images you'd like to use, with no need to do any formatting or spacing – that will all be taken care of!
Step 4: If you'd like to have regular text content on your page, it can be added in below the images.
After you've added in your text, if you click the '<>' button to flip to the HTML view of the rich text editor, before your text starts a 'split' can be added in (you may be familiar with this from the product template), it would look like this:
